Humble, yet delicious sardines are a great option for summer meals. We find it in abundance; it is low-budget and very healthy due to the Ω-3 fatty acids it contains. The following recipe is a piece of cake, with a dreamy flavour. Combine your sardines with a glass of Reserve Chardonnay from Oenou Yi – Ktima Vassiliades for the ultimate taste experience.


  • 500 gr. sardine fillets
  • 40 cherry tomatoes cut in half
  • 2 tbsp. olive oil
  • juice of one lemon
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • fresh or dried oregano (or thyme)
  • salt and pepper
  • fresh herbs for serving (parsley, mint, dill)


  1. Preheat your oven to 180oC.
  2. Place the sardines and cherry tomatoes in a pan lined with non-stick paper.
  3. In a bowl, mix the olive oil, lemon juice, onion and garlic.
  4. Pour the mixture over the sardines and cherry tomatoes and season with salt and pepper.
  5. Bake for 20 minutes.
  6. Garnish with fresh herbs and serve with baked potatoes, rice or a village salad, alongside a glass of Reserve Chardonnay from Oenou Yi – Ktima Vassiliades.
