Oenou Yi-Ktima Vassiliades’ new Thaleró Red pairs perfectly with sweet muffins and chocolate tarts. So, we combined the two of them in a single dessert and we present to you the most delicious double chocolate muffins. Bake them to indulge in chocolate and wine goodness!


Ingredients:

Muffins:

  • 100gr all-purpose flour
  • 40gr unsweetened natural cocoa powder
  • 3/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 large eggs, at room temperature
  • 100gr granulated sugar
  • 100gr packed light brown sugar
  • 80ml vegetable or canola oil or melted coconut oil
  • 2 tsps pure vanilla extract
  • 120ml full fat milk, at room temperature

Chocolate frosting:

  • 230gr unsalted butter, softened to room temperature
  • 420gr confectioners’ sugar
  • 40gr unsweetened cocoa powder
  • 3 tbsps heavy cream or milk
  • 1/8 tsp. salt
  • 2 tsps pure vanilla extract

To serve:

  • Chocolate sprinkles

Directions:

  1. Preheat the oven to 180°C. Line a 12-cup muffin pan with cupcake liners. Set aside.
  2. Whisk the flour, cocoa powder, baking powder, baking soda, and salt together in a large bowl until thoroughly combined. Set aside.
  3. In a medium bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla together until combined.
  4. Pour half of the wet ingredients into the dry ingredients. Then half of the full fat milk. Gently whisk for a few seconds. Then add the rest of the wet ingredients and milk. Stir until just combined; do not overmix. The batter will be thin.
  5. Pour the batter into the liners. Fill only halfway.
  6. Bake for 20 minutes. Allow to cool completely before frosting.
  7. While waiting for the muffins to cool, make the chocolate frosting. With a mixer, beat the butter on medium speed until creamy – about 2 minutes. Add confectioners’ sugar, cocoa powder, heavy cream, salt, and vanilla extract. Beat on low speed for 30 seconds, then increase to high speed and beat for 1 full minute.
  8. Pour the frosting in a piping bag and frost the muffins. Top with chocolate sprinkles and serve with a glass of Thaleró Red by Oenou Yi-Ktima Vassiliades!
