This Green Fig Salad with Goat Cheese and dakos rusks is a beautiful and well choice best served with a glass of Playia Rose Dry from “Oenou Yi – Ktima Vassiliades”.


For salad

  • 1 green apple
  • 1 pear
  • 2 tbsp balsamic vinegar
  • 100g dried figs
  • 2 tbsp olive oil
  • 50g dakos rusks
  • salt and pepper
  • 200g mixed greens
  • 250g goat’s cheese

For serving

  • 50g walnuts
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey


For the salad

  • Cut the green apple and pear into thin slices and place in a bowl.
  • Add the balsamic vinegar and mix.
  • Cut the dried figs into large pieces and add to the bowl.
  • Add the olive oil, dakos rusks, cut into pieces and season with salt and pepper. Toss to combine.
  • Add the green salad and goat cheese, cut into pieces. Mix thoroughly.

For serving

  • Place a pan over high heat.
  • Add the walnuts.
  • Add the balsamic vinegar and honey and mix, allowing the walnuts to caramelise for 2-3 minutes.
  • When ready, remove from heat and allow to cool.
  • Add the caramelized walnuts to the salad and serve next to a glass of Playia Rose Dry from “Oenou Yi – Ktima Vassiliades”.
