You read that right! Turn your favourite Playiá Cuvée Spéciale by Oenou Yi – Ktima Vassiliades into delicious red wine ice-cream and live summer to the fullest!


  • 1 bottle of Playiá Cuvée Spéciale
  • 2/3 cup brown sugar
  • 3 cups heavy whipping cream
  • 4 egg yolks
  • 1 vanilla bean


  1. Pour the Playiá Cuvée Spéciale into a large pot and simmer over low-medium heat until it is reduced to one cup of liquid. Set aside.
  2. In a pot, whisk together the brown sugar, and whipping cream.
  3. Cut your vanilla bean in half and scrape it out into the pot. Add the bean pod to the pot as well.
  4. Stir constantly while cooking over medium heat until it begins to steam, but before it boils.
  5. Beat your egg yolks until they are light coloured.
  6. Remove the vanilla bean pod from the cream.
  7. Slowly add the cream into the egg yolks. It is important to add the cream to the eggs very slowly so that they do not curdle.
  8. Pour the mixture back into the pot and cook over medium heat until it thickens and turns in to a custard. Remove from heat.
  9. Pour the mixture through a strainer and into a large bowl.
  10. Stir in the reduced wine.
  11. Chill the mixture in the fridge for an hour or two until cold.
  12. Add to your ice cream maker and freeze according to directions.
  13. Serve yourself a big portion of Playiá Cuvée Spéciale ice-cream alongside a glass of Red Melody!
