Premium Xinisteri – 2020
Perfectly expressing the terroir of Omodos, this collectible Xinisteri of limited production, comes from the 67-year-old vineyard of the grandfather George Vassiliades, the current pride of Oenou Yi-Ktima Vassiliades.
Complex and solid, it matured aristocratically in noble French oak. It has a bright golden yellow colour, buttery aromas of citrus, melon and pear and hints of nutmeg, clove and vanilla, which complement its fruity character.
Patience during aging is rewarded with the dense, creamy and simultaneously crunchy taste and the persistent aftertaste, which dominates the palate.
It is worth aging it further, since time will grant the wine an even more complex form.

Served at 10˚C-12˚C, Premium Xinisteri offers extraordinary gastronomic experiences when accompanied by creamy carbonara dishes with wild mushrooms and fatty seafood, such as scallops.
