  • 500 gr. scallops, cleaned and very well drained
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 garlic clove, crushed
  • Salt & pepper
  •  ½ lemon, its juice and zest


  1. Heat the olive oil and butter in a pan over medium to high heat.
  2. Sauté the scallops for 2 minutes on each side.
  3. Add the crushed garlic. With a spoon pour some of the olive oil-butter sauce over the scallops while they are cooking.
  4. Season with salt and pepper and add the lemon juice and zest.
  5. Serve immediately alongside a glass of Premium Xinisteri by Oenou Yi-Ktima Vassiliades.
