A special seabass recipe, baked in the oven, with fragrant herbs and “Oenou Yi” Zivania that will pleasantly surprise you. Light, without lacking in flavour, it’s ideal for the hot summer noons.


  • 4 seabass fillets
  • 4 rosemary springs
  • 4 thyme springs
  • 4 tblsp. olive oil
  • 6 tblsp. “Oenou Yi” Zivania
  • Salt and peppers
  • Oven-baked potatoes or rice and green salad to serve


  1. Preheat the oven to 200°C.
  2. Season the fillets with salt and pepper and roll them up, tying them with the rosemary and thyme springs.
  3. Put them on a parchment paper covered tin and pour over the olive oil and “Oenou Yi” Zivania.
  4. Bake them for 20-30 minutes.
  5. Serve alongside oven-baked potatoes or rice and a green salad.
