This is a wonderful and tasty seafood risotto recipe that will definitely excite you. The occasion requires good wine, which is why Rodámbelo from the wine cellar of Oenou Yi – Ktima Vassiliades is perfect for this dish!


  • 2 cups arborio rice
  • 1L vegetable broth
  • 150gr. shrimp, peeled and cleaned
  • 150gr. squid, cleaned and sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 100ml olive oil
  • 200ml Playiá White Dry
  • 100gr. butter or margarine
  • 2 tbsps chopped parsley
  • salt and pepper


  1. Heat the broth over low heat. Remove from heat and keep warm.
  2. In a deep frying pan, sauté the garlic in 1 tbsp. olive oil for 2-3 minutes. Remove from heat.
  3. Add the squid and shrimp to the pan and sauté for 2-3 minutes.
  4. Add half the wine and simmer for 3-5 minutes. Remove from the pan and set aside.
  5. Sauté the onion in 1-2 tbsps olive oil until it withers.
  6. Add the rice and leave for 4 minutes. Stir to coat with oil.
  7. Add the rest of the wine and wait for the alcohol to evaporate.
  8. Add a portion of the broth to pan with a spoon and stir until the liquids are absorbed. Repeat the process for 30 minutes using all the broth until the rice is cooked.
  9. Before serving, add the shrimp and squid and season with salt and pepper.
  10. Remove from the heat and mix with 2 tbsps butter or margarine, the remaining olive oil and parsley.
  11. Cover the pan and leave the risotto to set for 3-5 minutes before serving.
  12. Serve it next to a glass of Rodámbelo by Oenou Yi – Ktima Vassiliades!
