Traditional amatriciana spaghetti with tomato sauce and bacon; an easy dish to make for a memorable meal to be enjoyed with your significant other. It pairs perfectly with a glass of Oenou Yi – Ktima Vassiliades’ premium red wine Geróklima.


  • 1 package of spaghetti
  • 3-4 pieces of diced pancetta or bacon
  • 1 onion
  • 5-6 ripe tomatoes
  • 200 gr. lightly spiced, unsalted pecorino cheese
  • 1 tsp hot chili or chili flakes
  • Salt
  • Freshly ground pepper
  • ½ cup of olive oil


  1. Heat the olive oil and sauté the diced pancetta or bacon.
  2. Place them on a plate with absorbent paper.
  3. Fry the chopped onion until it turns golden-brown and add the chili flakes or hot chili.
  4. Add the tomatoes, season with salt and pepper and then add the pancetta while leaving the sauce to thicken.
  5. Boil the spaghetti and a few minutes before it becomes al dente, add a cup of boiled water to the sauce.
  6. Drain the spaghetti and add it to the sauce. Garnish with grated pecorino and serve it next to a glass of Oenou Yi – Ktima Vassiliades’ finest red wine Geróklima for the ultimate food pairing!
