An easy and at the same time delicious strawberry tart recipe, accompanied by “Thalero” the white semi-sweet wine of our winery “Oenou Yi – Ktima Vassiliades”.


For the dough:

  • 200 gr. unsalted butter, chilled and cut into pieces
  • 450 gr. flour
  • 2 eggs, yolks only
  • 7 -8 tbsps water
  • 1 tsp. sugar

For the cream:

  • 350 gr. fresh whole milk
  • 1 vanilla stick, cut lengthwise
  • 4 eggs, yolks only
  • 100 gr. granulated sugar
  • 25 gr. flour plus a little more for sprinkling
  • lemon zest

To assemble:

  • 500 gr. strawberries, peeled and cut in half
  • icing sugar for dusting


  1. Preheat the oven to 180οC air or 160οC heating elements and place the middle rack on.
  2. Butter the tart plate. Put all the ingredients for the dough in the mixer. Mix them well until they become a soft mass. Then wrap the dough in cling film and put it in the fridge for half an hour.
  3. Lay a sheet of foil on your workbench, and spread the dough with the rolling pin to the width of your tart plate.
  4. Then pierce the dough around with a fork and bake for about 30 minutes. Leave to cool.
  5. Put the milk and the vanilla stick in a saucepan for a few minutes to heat through.
  6. In a bowl, mix the yolks and the sugar. Add the flour and the lemon zest.
  7. Gradually add the milk to the egg mixture, stirring constantly.
  8. When the mixture is homogenised, pour it back in the pot and heat on low heat, stirring constantly until it thickens.
  9. Remove the pot from the heat, cover the surface of the cream with cling film and let cool.
  10. Fill the tart with cream and flatten it. Place the strawberries on top and sprinkle with icing sugar. The tart is ready to be served. Enjoy it with a glass of Thalero by ‘Oenou Yi – Ktima Vassiliades’!
